Liverpool is well and truly going through a heatwave and one of the best ways to celebrate is by finding a bar with a sun drenched garden or terrace and trying out a few of the best summer cocktails to enjoy in the sunshine.
From fruity and refreshing tipples to bubbly Bellini’s and zesty iced blends, these yummy cocktails from local Liverpool bars are sure to quench your thirst.

Paradise Punch – The Club House
If there was an official beach bar beverage, it is the Club House’s Paradise Punch. A tropical mix of fruity flavours including juices, grenadine, some big wedges of zesty lemon and lime and a hearty kick, this cocktail tastes like liquid sunshine.
The Club House is undoubtedly one of the best places to enjoy a cocktail when the sun is shining, they have a fabulous sunny terrace area and a cocktail menu full of vacation classics that are themed around a 70s revival.
The Paradise Punch is a particular favourite but there are plenty of exotic throwbacks and frozen options that are best tasted whilst topping up your tan.
J.P Morgan Martini – Carpathia
The Carpathia Bar, set within the beautiful 30 James Street Hotel, sails lucky guests through the phases of a Trans-Atlantic cruise with a cocktail list that is split up into the different stages of your journey. From Anchor’s Aweigh to The Captain’s Table, this bar is the perfect place to sample some of the best summer cocktails.
The highlight is their twist on the ‘Porn Star Martini’, the J.P Morgan Martini. This refreshing tipple is a tasty blend of Finlandia, Butterscotch, Vanilla, Caramel, Passion Fruit and Pineapple Juice, served with a shot of Prosecco.
There is also a decadent rooftop terrace, so you can enjoy your seafarer’s tipple whilst you bask in the sunshine with views over the Mersey and Liverpool’s docklands.
Appleton Smash – Red Door
Sun worshippers and cocktail enthusiasts will rejoice to find out Red Door have transformed their outdoor terrace into a Tiki Hut just in time for the summer and they’re serving an amazing range of rum-tastic cocktail choices.
Choosing our favourite was a hard one to call, but we’ve gone with a firm crowd favourite, the Appleton Smash. Full to the brim with Appleton Rum, this cool and refreshing cocktail is oozing with passionfruit and vanilla and is served in a cute tiki style jar, perfect for summer evenings.
They have also teamed up with RCharity which means until the end of September, 50p from every cocktail sold from the Appleton menu will go straight to the charity. Drinking in the sun and helping charity? We’re sold.
The Head of Mayahuel – Blind Tiger
Summer is for sharing, right? With that in mind check out Blind Tiger’s amazing cocktail made for four, or maybe just two, we’ll let you decide.
This spectacular cocktail features a tantalising mix of Olmeca Altos Tequila and Akashi Tai Plum Sake, shaken together with Orgeat Almond syrup, apple juice, pomegranate juice and a fresh squeeze of lemon. Plus, it’s served in a head, obviously.
You really won’t find a bar quite like Blind Tiger, once a Kung Fu school, the cocktail menu takes inspiration from its roots and offers drinks titled things like Shotokan Sour and Death in the Dojo.
They also have a fab little secret beer garden round the back that is the perfect suntrap to enjoy your cooling cocktail. When you’re in there don’t forget to sample some of the dim sum, you won’t taste better.
Mango and Orange Fizz – Be At One
A self-confessed “cocktail institution”, Be At One is the number one destination for a cocktail connoisseur who likes a lot of choice, and when we say a lot we mean it. They have over 160 cocktails on the menu, so you best get your decision cap on or you might be there for a while.
To make it a bit easier for you we’ve chosen arguably the most summery one they have on offer, the Mango and Orange Fizz. Described as summer in a glass, this fruity number features a blend of fresh orange slices, Absolut Mango vodka, lemon and sugar, made long with a splash of soda water.
Enjoy it on the idyllic sun terrace and you’re on to a winner.
St Tropez Sour – Salt Dog Slims
Renowned as being the greatest American style bar in Liverpool, Salt Dogs may be known for their Steins and Brines, but they also have a cracking cocktail menu.
Cocktail lovers are encouraged to pay Sat Dog Slims a visit, and in particular summer cocktail lovers are encouraged to sample the St Tropez Sour. A blend of Finlandia Vodka raspberry and rhubarb liqueur, raspberry jam, cranberry juice, lemon juice and whites, it’s delicious.
With quirky interiors including a bath, hot dogs on tap and a little sun trap beer garden, what more could you need?
Cucumber Fizz – Filter + Fox
If the heat is getting too much, head to Filter + Fox and take a sip of their crisp Cucumber Fizz, you won’t be disappointed. Featuring a refreshing mix of gin, cucumber and elderflower, muddled together with lemon and a dash of soda, it’s sure to re-hydrate you.
With a distinct bohemian atmosphere, Filter + Fox was set up by two friends who’ve spent years working in the Liverpool food and drink trade, it’s a quirky little bar that really puts its visitors at ease. Don’t miss out!
Solero – The Alchemist
Famous for its spectacular cocktails and molecular mixology, we love that the Alchemist has finally arrived in Liverpool and we can’t get enough of their cocktails.
The Solero is one of the most refreshing cocktails you’ll find, basically it tastes just like a Solero ice cream but with vodka. Sound good?
It’s made up of a yummy mix of Absolut raspberry vodka, briottet blue curacao, bubblegum, apple, lime and topped with white chocolate cream foam.
